Swedish Egg Coffee
“This recipe has been handed down from my mother, Edith Anderson, and my grandmother, Emily Nordeen.” – Lois Barott
Measure 12 cups of cold water into an old-fashioned enamel coffee pot. Bring the water to a boil and add a pinch of salt.
In a mixing bowl, combine 1 cup of your favorite ground coffee with 1 raw egg and mix thoroughly.
Reduce the water to a simmer and add the coffee and egg mixture. Use a long wooden spoon to mix the grounds into the water. Continue to stir to keep the mixture from foaming over.
Bring the coffee to a slow boil and continue stirring for 2 to 3 minutes.
Remove from heat and add 1/4 cup cold water – This will cause the coffee grounds to settle to the bottom of the pot.
Pour the coffee into a thermal carafe, using a coffee strainer to catch any stray coffee grounds.
Enjoy!
